To give this sausage a milder flavor, use rosemary instead of the sage, black pepper and red pepper flakes.
In a large bowl, mix all the ingredients together. Form the mixture into 12 patties. Spray a large, nonstick skillet with cooking spray and place over medium heat. Add the patties and cover. Cook until browned and juices run clear, about 5 minutes on each side. If using a thermometer, cook until internal temperature reaches 165 F. Transfer to a serving platter and serve immediately.
