Beacon dietitian offers breakfast burrito recipe

Need a change in your morning routine? Try out this breakfast burrito recipe, as recommended by a Beacon dietitian:

Easy Breakfast Burrito

Serves 2

Ingredients:

3 large eggs, beaten

2 large handfuls fresh Spinach (frozen is fine too, just thaw and drain well, can use ½ to 1 whole package)

½ cup prepared black beans

½ cup tomatillo (green) or red salsa

¼ cup shredded cheese of choice

2 tortillas (whole corn or whole wheat)

Directions:

Heat pan and add in spinach to cook; if using fresh it will cook down, if frozen just heat through.  Add eggs and cook until they are fluffy and reach 160°F. Heat black beans in microwave.

Place tortillas on a plate.  Divide eggs evenly between the 2 tortillas, topping each with ¼ cup black beans and salsa and 2 Tablespoons cheese.
